Ingredients

1 lb Ground beef

Salt & pepper

1 ea small onion diced

4 oz Green chili peppers, chopped

4 ea Large flower tortillas

3 cups Shredded cheese

15 oz Red enchilada sauce

8 oz black olives, sliced

Directions

Saute the ground beef over medium-high heat until browned and cooked, breaking up the beef into small pieces.

Pre-heat the oven to 350°F. Grease a 9x13-inch baking pan with cooking spray.

Add the onion to the saute pan and cook for 5 minutes until translucent.

Stir in the green chilis and cook for 1 minute to warm, stirring occasionally.

Remove pan from heat and stir in the ground beef and 1/4 cup of the enchilada sauce.

To assemble the enchiladas, lay out a tortilla and spread two tablespoons of sauce over its surface. Portion about 1/4 of the ground beef mixture and spread it in a line down the center of the tortilla, then sprinkle with 1/2 cup cheese.

Roll up tortilla and place in the prepared baking dish. Repeat with the remaining ingredients.

Spread the remaining enchilada sauce on top of the tortillas, then sprinkle the remaining shredded cheese on top.

Sprinkle the sliced black olives over the cheese.

Bake uncovered for 20 minutes.
